Pamper yourself with these simple but intensely nourishing raw Chaga blueberry bars. 

Often called the King of Mushrooms, Chaga is a powerful adaptogen and one of the highest levels of antioxidants ever found in foods. It is an excellent source of minerals, B-vitamins, potassium, magnesium, zinc and iron. 

Chaga increases overall physical and mental performance, boosts the immune system and lowers blood pressure and cholesterol. The melanin in Chaga nourishes and protects eyes, skin, nails and hair, making it a proper beauty food. 

 

Raw Adaptogenic Blueberry Chaga Bars

Ingredients

For the base

  • 1 cup dates
  • 1 cup desiccated coconut
  • 1/2 cup walnuts
  • 1/2 cup almonds

For the topping

  • 1/2 cup coconut milk
  • 1 1/2 Tsp. Chaga extract 
  • 2 Tsp. Natural sweetener - raw honey or maple syrup
  • 1 cup cashews (soaked for a couple of hours or ideally overnight)
  • 1 cup desiccated coconut
  • 1 handful of blueberries 

 

Instructions

  1. Blend base ingredients with a blender or whisk until combined.
  2. Place the dough in a round or square container.
  3. Combine all the topping ingredients in a blender and mix.
  4. Pour toppings mix over the base.
  5. Place in the freezer for 30 mins or in the fridge overnight.
  6. Cut into bars or bite-size pieces.
  7. Enjoy mindfully and intentionally.
