Enrich your treats with Chaga Extract Powder to give your immune system a boost. This Vegan Strawberry Vanilla Cake with Chaga Frosting recipe is super simple and highly nurturing. The perfect treat to enjoy with friends and a healthy snack to take to school or work.

Vegan Strawberry Vanilla Cake w/ Chaga Chocolate Frosting

  • Serves 10-12
  • Preparation: 20 minutes
  • Total: 30 minutes


  • 3/4 cup Baking flour
  • 1 cup of Vegan cookies of your choice
  • 1 cup Plant-based milk
  • 1 cup Coconut sugar
  • 1 Tbsp. Nature’s Antidote Chaga mushroom extract
  • 1 jar Strawberry jam
  • 1 cup of fresh strawberries (optional)
  • 1/3 cup Olive oil, coconut oil or vegan butter
  • 2 tsp. Vanilla extract
  • 1 tsp. Baking soda
  • 1 Tbsp. Apple cider vinegar
  • Pinch of Salt



For the frosting

  1. Follow this vegan Nutella recipe or use store-bought vegan Nutella (we recommend Nocciolata)
  2. Add Chaga extract powder to the frosting mix. 

For the cake 

  1. Preheat the oven to 350 °F.
  2. Grease two 7-inch round cake tins with coconut oil (or spray with non-stick spray). Cut baking paper into circles to fit the bottoms.
  3. Sift the flour into a mixing bowl. Add sugar, baking soda, and salt. Mix until combined. 
  4. Add plant-based milk, vanilla, oil, and vinegar. Whisk until combined.
  5. Divide the batter evenly between the two cake tins. 
  6. Bake for 30 minutes.
  7. In the meantime, crush the cookies into small pieces and set them aside.
  8. Remove from the oven and check if the cake is done by sticking a toothpick into the centre. If it comes out clean, then your cake is ready!
  9. Once the cakes are cooled down, decorate with strawberry jam and cookie crumbs. 
  10. Frost the entire cake with the vegan Nutella frosting. Add more cookie crumbs and fresh strawberries to taste.
